A Non-recipe Recipe: Celebrating Apricots

Since apricots are nearing the end of their season, let’s celebrate them and all of their tangy-sweet goodness! Here’s a simple non-recipe recipe. It’s as easy as 1, 2, 3.

  1. Slice apricots in half and remove pit
  2. Either keep apricot halves raw, broil, or grill lightly (about two minutes, but watch carefully)
  3. Fill with either ricotta mixed lightly with honey — or — flavored whipped cream (e.g., a few drops of vanilla or almond extract, your favorite liquor, or finally chopped nuts like pistachio)
